love the nutrition that chia seeds offer so I wanted to give a recipe like this a chance.  I wanted an easy “overnight” recipe that the boys would like.  After several incarnations and tests, I found this one via Yummly.  The flavor is very heavy on the banana side but I liked it.  In my version, I also added cardamom.

Chia Seed Banana Breakfast Pudding

Ingredients:

1 Can full fat coconut milk

1 Medium or small size banana, ripe

1/2 tsp Cinnamon

1/4 tsp cardamom

1/2 tsp Salt

 

1 tsp Vanilla Extract

1/4 cup Chia Seeds

Directions:

1. Mash banana in a bowl.  Add the rest of the ingredients and mix well.  Cover and chill overnight.

2. In the morning, portion into bowls and add fresh fruit, nuts and seeds.  Serve to adoring small children and tell them it is pudding.
